Abstract: The Flight of Five Food Truck Company is run by Catherine Bergman and her colleague Malik Pryce. They are both hard working and determined business workers. Catherine Bergman has her degree in Food Service and Beverage Management and Culinary Arts and Malik Pryce has worked in many restaurants where he has been on his way into a management position and has been working with Catherine since 2015. The Flight of Five Food Truck Company is located and run in Lockport New York. Where weIt has a plan on selling items named after local colleges’ and universities’ names and mascots. The Flight of Five Food Truck Company is named after the 5 five locks on the Erie Canal, we and this company wanted to have a historical tie in to our business and the town.

Pair and Compare Capstone

Abstract: Pair and Compare is a business concept that came from the culmination of a four year degree in Food Service and Beverage Management at Paul Smiths College. This capstone is broken into two parts. The first is a wine/tea tasting and food pairing prototype event that showcased possible pairings to collect data. The second part is to use the data and research to determine if a viable and profitable business similar to this event can be realized

Interactive Electronic Education at the Paul Smith’s Visitor Interpretive Center

Abstract: The use of electronics in an educational setting is a debated topic, but certain kinds of programs are becoming more prominent. The purpose of this study is to examine how interactive electronic environmental education programs are used to facilitate environmental education, and attempting to determine whether or not the Paul Smith’s College Visitor Interpretive Center (VIC) could make use of them. Through interviews with key members of the Paul Smith’s College and the VIC as well as surveying the general public of both communities it was determined that these forms of educational programs were not in high demand by the users of the VIC, but electronic recreation tools were.

Management of the Invasive Species; a recommendation to the Paul Smith's College VIC

Abstract: This research looks at invasive species that are harming the Adirondack region. By examining both invasive species on land and water we can make connections to what the problematic issues are. By understanding the species, information can be gathered to educate the public on what to look for and how to prevent the species from spreading. Paul Smith’s College VIC is looking for new ideas to incorporate for both the campus and local community. The focus of this project is to look at what the VIC has done in the past, present and future in terms of education and programs. Creating a new program and addressing an environmental issue are two key components that we hope to make the VIC a stronger addition to the area.

The Paul Smith's Shop at the Left Bank: A Feasibility Study

Abstract: The ownership and management of the Left Bank Café in Saranac Lake, New York would like to partner with Paul Smith’s College in an effort to create a long-term relationship between the two organizations. The Left Bank Café (LBC) identified available rental space adjacent to their existing business in order to benefit both parties. The new venture that is to be known as the Paul Smith’s Shop at the Left Bank, will be a synergistic addition to the space. The Left Bank Café can offer take out premade soups and salads as well as French fare known from the café. The Market will offer a selection of Paul Smith’s goods such as apparel, knive sets, syrup, books, and other products identifying the college. Further, for customers interested in programs at the college, there will be readily available kiosks and two visual screens showing pictures and information about the school. The Shop will also function as an ambassador for Paul Smith’s within the Saranac Lake community with which the school has close ties.

Extracurricular Activities and Academic Success

Abstract: This report investigates whether student activities has an impact on academic success. The student activities were broken into five categories: on campus clubs and organizations, off campus clubs and organizations, team sports, independent athletics, and jobs. While this subject has been studied before, results tend to differ widely due to college type or sample size. In order to study this on Paul Smith’s College campus, a survey was sent to students containing questions regarding their GPA and in what activities from the five categories they regularly participated. There were 120 responses to the survey. Out of those 120 students, 83 percent reported that they did participate in student activities. Of that 83 percent, 76 percent of students stated that they felt extracurricular activities had helped improve their performance in their academic studies. Of the 83 percent, 45 percent had a 3.5 to 4.0 GPA. While this does seem to support that extracurricular activities has a positive effect on academics, it is uncertain whether students who are more determined and academically inclined are the ones more likely to do extracurricular activities. That would be a topic for further study.

An Educational Assessment of a Nature Center

Abstract: Currently, there is a strong focus on public environmental education. However, it is not known how environmental education programs relate to the New York State Curricula or to the North American Association for Environmental Education’s (NAAEE) education goals for school-aged children. The purpose of this qualitative, relationship study is to determine how and to what extent a nature center’s educational programs relate to New York State Curricula and the North American Association for Environmental Education’s education goals for school aged children. Data will be collected through a content analysis approach. The information gathered from the content analysis will then be compared against each other to see where there are gaps in the nature center’s educational goals and how they might ameliorate them. This information can be used by the nature center to format their educational programs in a way that is more conducive with both the New York State Curricula and the NAAEE educational goals.

The Price Tag of Ambiance

Abstract: The Price Tag of Ambiance is study surrounding customer’s price perception of a restaurant’s application of physical attributes of the establishment itself. Customers expect to pay for what they experience; if the price is too small, the customer tends to get concerned, too high causes a lack of patronage to the establishment. This study looks at price perception in relation to customer’s views of quality of the main aspects that define physical ambiance. Subjects for this study will be Italian restaurants and consumers ranging in ages from 18 through 45. This is beneficial for upcoming restaurateurs, as it allows more insight into what ambiance is worth to a customer, and therefore can raise their price point. This knowledge will assist restaurateurs in judging how to best utilize the physical attributes of the establishment. The study looks a survey given to the target demographic, containing photographs of several restaurants. After which, the participants will be questioned on their thoughts of price at each restaurant.

Investing in Training so that Employees Feel Invested in You:

Abstract: Employee training can be expensive, that is why some employers may choose to cut corners on the training process. They wrongly assume the employee will learn as he/she goes. The employees who cannot learn quickly enough can become a burden to the restaurant and cause it to lose money. The purpose of this study will be to determine how and to what extent do restaurants choose their investments made in employee training to ensure employee satisfaction. This qualitative study will make the connection between the decisions restaurants make about employee training and if the decisions are made with employee satisfaction in mind. Surveys sent to the human resource managers will be the method used for this study. The human resource managers of restaurants will be asked specifically about their decisions in employee training and if the decision making process takes employee satisfaction into consideration. This study will be able to inform restaurants of employee training investments that will ensure employee satisfaction, which can improve business.
