Abstract: Executive Summary: Mission Statement: The Green Mountain Food Truck Company’s mission is to offer Burlington’s Students, Locals and Explorers alike quick, convenient and totally amazing food, which you and your wallet can enjoy. Management Plan: The Green Mountain Food Truck Company’s will be a member-managed Limited Liability Company, organized in the state of Vermont. Jonathan Spaeth is the Head Chef and Owner-Operator, and manages day-to-day operations. Operation Plan: The Green Mountain Food Truck Company will operate 7 days a week, serving breakfast, lunch, dinner (seasonally) and munchies each day, and operate 8:30am – 3:00pm. Pre ordering is available to reduce the ticket times, and increase the amount of customers served at one time. Marketing Plan: The Green Mountain Food Truck Company will use multiple promotion opportunities, using social media outlets, email, and at Green Mountain Food Truck Company. Financial Statement: The Green Mountain Food Truck Company will need $95,320 in starting capital. Mr. Spaeth will make a contribution of 25% with the remaining 75% obtained through a loan.

The Paul Smith's Shop at the Left Bank: A Feasibility Study

Abstract: The ownership and management of the Left Bank Café in Saranac Lake, New York would like to partner with Paul Smith’s College in an effort to create a long-term relationship between the two organizations. The Left Bank Café (LBC) identified available rental space adjacent to their existing business in order to benefit both parties. The new venture that is to be known as the Paul Smith’s Shop at the Left Bank, will be a synergistic addition to the space. The Left Bank Café can offer take out premade soups and salads as well as French fare known from the café. The Market will offer a selection of Paul Smith’s goods such as apparel, knive sets, syrup, books, and other products identifying the college. Further, for customers interested in programs at the college, there will be readily available kiosks and two visual screens showing pictures and information about the school. The Shop will also function as an ambassador for Paul Smith’s within the Saranac Lake community with which the school has close ties.

HOS 462 Hospitality Business Simulation

Abstract: We as students in this course have been systematically redeveloping and managing a large multi-departmental hotel. This computer-simulated activity has given us the opportunity to achieve success through creative analysis to solve economic, social and environmental problems. The consequences of these decisions are reported and subsequently analyzed over a 3 year cycle of business. During our Capstone Celebration we have presented our results in a poster session and then provide a summative boardroom discussion of those internal and external forces and decisions that most powerfully affected our group’s successes, failures and adoption of change. This Paul Smith's College capstone experience has also allowed us to finalize our Paul Smith's education by giving us the opportunity to demonstrate mastery of the general education core and programmatic learning objectives. We have also had the chance to apply skills, methodologies and knowledge learned during our courses of study, building on this undergraduate learning experience as we evaluate our readiness for the next stage in our professional development.

Guest Retention due to Value-Added Services within Resorts: A study of the relationship between value added services and guest loyalty in both large and small resorts

Abstract: The resort market is currently an industry of service, rather than simply selling rooms as it was in the past. The concept of a value-added service during a stay in a resort rather than a tangible room is now very important to an individual guest. The purpose of this project is to find out if value-added services make or break the potential for a first time guest to become a return guest. Also, the study shows if these value-added services contribute to customer loyalty. The methods used show the link between a value-added stay and return guests of both small boutique hotels and larger resorts. This data was collected through the form of interviews of front office managers of these types of resorts. The significance of this project will aid hoteliers in both small and larger resorts in deciding the type of service provided by their employees. It will also show them what additional services not already put in place they may want to implement to further guarantee repeat guest business.

How are hotels responding to the increase in demand for pure/ hypoallergenic rooms?

Abstract: Americans today have become more and more aware of the germs that are around them. The television advertisements have influenced the idea that there are a lot of germs that people need to be aware of. For example, there is a hazmat advertisement for Hampton Inn that shows a woman being afraid to climb into bed. A housekeeper then comes into the room, in a hazmat suit to take apart the bed stating that Hampton Inn always washes their sheets and duvets, implying that other hotels may not. The purpose of this project is to determine how hotels are responding to the increase in demand for hypoallergenic/pure rooms. The general managers of chain hotels in the northeast will be surveyed. This information will then provide results of how the hotels plan to accommodate these travelers. This will also help determine if the demand for pure rooms will increase the supply of pure rooms. This information can be used by hotel chains to improve their customer expectations of the hotel as well as meet the needs and wants of their travelers.
