Abstract: The management capstone planned an event for the Paul Smiths college community to partake in. They conducted interviews of event planners, spoke to different departments within the school, created a budget, and executed the event. Their event was based around earth day and sustainable practices. They were able to track the number of attendees through a sign-in sheet and satisfaction of the event through a survey. The capstone students learned what it takes to plan events, how to execute them, and how to track their impact on the community involved.

Product Feasibility Plan:Little ADK

Abstract: Little ADK’s is a take-home wilderness experience for children between the
ages of 4-11. This is an oyster mushroom growing kit that will help a child bring the
magic and wonders of the Adirondacks back home, outside the Blue Line (the term used
to define the Adirondack Park Preserve.). This pod-based garden system allows children, as well as adults, the
opportunity to grow their very own Adirondack native plants. Little ADK’s also comes
with an informational booklet and an educational coloring book describing the
importance and beauty of the Adirondack Park.
Little ADK will be marketed to tourist within the Park as well as to native
wilderness lovers. Those purchasing the product can feel environmentally conscientious
as Little ADK’s donates 10% of profits toward the preservation of the Adirondack
Mountains.

Tiny houses for families

Abstract: Houses have changed in size and style over the centuries. We looked at tiny houses and research the economic and social benefits and issues with raising a family in a tiny house. We limited the family to four and made our house 800 square feet. We looked at case studies of families who are currently raising a family in a tiny home to find out what they say their problems may be. We found many unexpected benefits in our research. Many families believe that aside from the economic benefits, raising a family in a tiny home forces the family to be close and to communicate with each other. We interviewed a contractor, Harry Gordon, who gave us information in the building of sustainable housing. There was also a survey we conducted from the Paul Smith’s Community. The survey gave us data on the amount of people who were willing to raise a family in a tiny home. In our results, we found that for those willing to try to raise a family in a tiny house, it is very feasible.

Rooted Education: learning from aquaponics

Abstract: Aquaponics is the integration of soil-less agriculture (hydroponics) within closed-loop aquaculture systems to reduce the toxic accumulation of nutrient waste from aquatic animals. Bacteria naturally establish to purify water by oxidizing the ammonia secreted by fish, which reduces the toxicity of effluent while creating a usable nitrogen source for plants. The conversion of ammonia and nitrite into nitrate by living bacteria communities is called a biological filter, or biofiltration (FAO 2014). Aquaponics would not be possible without biofiltration; the slightest amount of ammonia would be fatally toxic to fish, and plants wouldn't receive the nitrates they need to grow. There are unique opportunities offered by an aquaponics system to learn about ecological and human communities.
1.1. Aquaponics enables users to grow fish and agricultural plants with limited space and resource use (water, soil, and time). This enables an aquaponics user to invest less physical energy and time into expanding sustainable food resources for their household use.
1.2. A small aquaponics system could promote cultural values of self-sufficiency, energy consciousness, and connection to food systems. It could inspire individual efforts to produce food for one’s household, to build healthier and more resilient systems, and a greater appreciation for farming.
Therefore, this project aims to actualize a mobile and functional aquaponics system for the educational benefit of the Paul Smith's College community. I will provide the background knowledge needed to maintain an aquaponics system, as well as describe the general concept of aquaponics design.

This capstone is broken into two parts. The first is a wine/tea tasting and food pairing prototype event that showcased possible pairings to collect data. Jenkins Café

Abstract: Jenkins’ Café will be a quick service café establishment located at the base of Jenkins Mountain, along the trail systems of the Visitor’s Interpretive Center (VIC). The VIC has recently become an entity of Paul Smith’s College, allowing greater flexibility of management, away from State jurisdiction. About three miles into the VIC’s trail system is the base of Jenkins’ Mountain, the location for Jenkins’ Café.
Jenkins’ Café will serve local residents, Paul Smith’s College students, and VIC visitors’ quick meals consisting of sandwiches, soups, and salads while they utilize the VIC trails. Warm and cold beverages will also be available for service, including a small selection of beer and wine. Hikers, cross-country skiers, bird watchers, snowmobilers, and anyone participating in any VIC activities, can enjoy these fares when they arrive at Jenkins’ Café.

Abstract: The Flight of Five Food Truck Company is run by Catherine Bergman and her colleague Malik Pryce. They are both hard working and determined business workers. Catherine Bergman has her degree in Food Service and Beverage Management and Culinary Arts and Malik Pryce has worked in many restaurants where he has been on his way into a management position and has been working with Catherine since 2015. The Flight of Five Food Truck Company is located and run in Lockport New York. Where weIt has a plan on selling items named after local colleges’ and universities’ names and mascots. The Flight of Five Food Truck Company is named after the 5 five locks on the Erie Canal, we and this company wanted to have a historical tie in to our business and the town.

The Paul Smith's Shop at the Left Bank: A Feasibility Study

Abstract: The ownership and management of the Left Bank Café in Saranac Lake, New York would like to partner with Paul Smith’s College in an effort to create a long-term relationship between the two organizations. The Left Bank Café (LBC) identified available rental space adjacent to their existing business in order to benefit both parties. The new venture that is to be known as the Paul Smith’s Shop at the Left Bank, will be a synergistic addition to the space. The Left Bank Café can offer take out premade soups and salads as well as French fare known from the café. The Market will offer a selection of Paul Smith’s goods such as apparel, knive sets, syrup, books, and other products identifying the college. Further, for customers interested in programs at the college, there will be readily available kiosks and two visual screens showing pictures and information about the school. The Shop will also function as an ambassador for Paul Smith’s within the Saranac Lake community with which the school has close ties.

The Green Mountain Food Truck Company’s will be a member-managed Limited Liability Company, organized in the state of Vermont. Jonathan Spaeth is the Head Chef and Owner-Operator, and manages day-to-day operations.
Operation Plan:
The Green Mountain Food Truck Company will operate 7 days a week, serving breakfast, lunch, dinner (seasonally) and munchies each day, and operate 8:30am – 3:00pm. Pre ordering is available to reduce the ticket times, and increase the amount of customers served at one time.
Marketing Plan:
The Green Mountain Food Truck Company will use multiple promotion opportunities, using social media outlets, email, and at Green Mountain Food Truck Company.
Financial Statement:
