Abstract: For our capstone project we got the ingredient salt. There is a lot about salt that most people do not realize and so within this paper we want to let you know what we learned about salt. That includes the history of it, the many different types of salt and where they come from and also how they are used in culinary and baking. We also included in the paper how we used the ingredient throughout our five course meal. Some salts even have other uses that do not relate to cooking or baking and are still explained throughout the paper.

A Study of Pure and Artificial Maple Syrup Production

Abstract: Many people claim that they can tell the difference between pure and artificial maple syrup. However, pure and artificial maple syrup are made through two completely different processes. Through the method of a blind taste test, I want to answer the question whether or not consumers can in fact tell the difference between pure and artificial maple syrup when both served as is or baked into products through a catered breakfast. At the catered breakfast the following dishes were served: maple glazed doughnuts, breakfast casserole, sausage gravy and biscuits, pancakes with maple butter and maple syrup, vanilla and maple yogurt, and sliced fruit. There were two options to choose from for the maple glazed doughnuts, maple butter, maple syrup, and maple yogurts. One choice was made with pure maple syrup, the second choice was made with artificial maple syrup; the consumers did not know which option was made with which maple syrup. At the end of the breakfast, I asked each guest to complete a survey that would let me know which option they believed to be made with the pure maple syrup and which option they believed to be made with the artificial maple syrup.

Do consumers prefer American ice cream opposed to international ice cream?

Abstract: Do people tend to pick American flavors of ice cream or international flavors of ice cream? I did a study trying to answer this question. I used a survey to develop results and learn information about ice cream and other frozen desserts. By making ice cream from different countries, I was able to answer my questions. Through research and holding an event, I retained information to tell me if consumers prefer American or international flavors of ice cream.

Interactive Electronic Education at the Paul Smith’s Visitor Interpretive Center

Abstract: The use of electronics in an educational setting is a debated topic, but certain kinds of programs are becoming more prominent. The purpose of this study is to examine how interactive electronic environmental education programs are used to facilitate environmental education, and attempting to determine whether or not the Paul Smith’s College Visitor Interpretive Center (VIC) could make use of them. Through interviews with key members of the Paul Smith’s College and the VIC as well as surveying the general public of both communities it was determined that these forms of educational programs were not in high demand by the users of the VIC, but electronic recreation tools were.

Management of the Invasive Species; a recommendation to the Paul Smith's College VIC

Abstract: This research looks at invasive species that are harming the Adirondack region. By examining both invasive species on land and water we can make connections to what the problematic issues are. By understanding the species, information can be gathered to educate the public on what to look for and how to prevent the species from spreading. Paul Smith’s College VIC is looking for new ideas to incorporate for both the campus and local community. The focus of this project is to look at what the VIC has done in the past, present and future in terms of education and programs. Creating a new program and addressing an environmental issue are two key components that we hope to make the VIC a stronger addition to the area.

Building Families Stronger

Abstract: The purpose of this study is to design a program that can be implemented in local camps to accommodate the needs of individuals in a family group affected by mental illness. The study will explain the importance of educating individuals about mental illness and integrating supportive behaviors. This program is designed to help families cope with the effects mental illness can have on the entire family dynamic. Families are often the strongest support system for dealing with mental illness and educating families is essential for success of the mentally ill. Team building games are used to enhance social behaviors and encourage group bonding, this program uses a recreational therapeutic approach to addressing issues in the lives of those affected by mental illness. To figure out how many people will be most likely be using the therapy program, a survey was created using a series of questions that went with the topic for respondents to answer. In fact the survey established that the majority of people agree on recreational approach to therapy as a means of coping with their illness in real life tasks. Other questions asked was what their favorite activities where, such as paddle sports and hiking. Another question was what disability was so as to get an idea what accommodations would be need and services for patients involved with the program.

Downtown Saranac Lake Urban Forest Management Plan

Abstract: Trees and green spaces are important resources to any community. They are public spaces which provide havens of relaxation, play, and mental and physical stimulation. Trees and green spaces have been proven to have a positive impact on the mental and physical wellbeing of area residents. However, the care of these trees and green spaces is often overlooked or not planned for, leading to human/nature conflicts at a fine scale (local level). This is where arborists enter; arborists are individuals trained in the art of caring for trees, and are often involved in every stage of a tree’s life cycle, from planting to removal. But arborists are also teachers, acting as the intermediary between urban trees and the public and providing education to the people. The village of Saranac Lake, New York, is no different. The results of the data collected on Saranac Lake’s downtown street trees and parks were analyzed and compiled into a comprehensive urban tree management plan. A total of 236 trees and shrubs were inventoried and assessed for their health, overall condition, and pruning needs. Also included in the urban tree management plan are observations on the current state of the urban forest, recommendations for the mitigation and correction of any observable problems, and prevention and treatment courses of action for any future insect pests.

A LOOK INTO THE SOCIAL, MENTAL, AND PHYSICAL SHIFTS IN RECREATION BASED ON PAST, PRESENT, AND FUTURE TRENDS

Abstract: The purpose of our study was to try and understand the current recreational trends that are happening in the United States of America, and ultimately try and predict what future trends of recreation will be. We took on this study by starting with the history of recreation beginning with the ancient Greeks, and the history of sports. Then we looked at current trends going on in the United Sates such as demographic, economic, social factors, and continuities in leisure and recreation. Upon gathering all of our information and statistics we analyzed what those trends are and where they might be potentially leading to in the field of recreation. We will be concentrating primarily on time, space, money, skills, choice, technology, mental health, physical health, and accessibility.
