Abstract: Various forms of technologies are used to check in and out of hotels. The purpose of this research is to determine if high technology supported properties differ from traditional properties in terms of roles and responsibilities for front of the house personnel for managers of business properties. The study will explore how and to what extent new automated processes at hotels affect the roles and responsibilities for front of the house personnel and if different skills are needed between properties that use traditional and automated procedures. Due to the exploratory nature of the study qualitative methods will be used, using the high technology property chain, Club Quarters. The method that will be used is both an electronic survey and telephonic interview, having multiple front office managers at different Club Quarters sites fill out a questionnaire with both multiple choice and open ended questions; and answer questions from a telephonic interview regarding the roles and responsibilities of front house personnel. The data that will be collected from the front of the house management will be used to conclude if the data collected shows that the roles and responsibilities of front of the house personnel differs from traditional to high technology; and if additional training requirements are needed. The results of the research will be shared with participants as informational only. Data will be collected from multiple properties, using various Club Quarters sites from inn the United States. Focus areas of information will be captured by asking specific questions of management that will include background of hotel, job descriptions, and training requirements. Front end management was chosen to fill out the surveys as they have the day to day oversight and will be able to answer the questions honestly and have the knowledge to do so.

Generation Y's Eating Habits

Abstract: The upcoming generation, Generation Y, eats in a different way than any generation before. This study seeks to determine how influential global flavors, customized foods, nutritious foods, and restaurant operating hours are to Generation Y’s choice selection in restaurants. Whether or not restaurants are prepared for Generation Y, and are implementing these growing trends into their menus, were also studied. Results were gathered from Gen Y’s through the use of a survey, distributed through Facebook and the Paul Smith’s College Email. Results from restaurants were gathered through an online survey, which was sent to fifteen restaurant professionals in the area. These results were then used to conclude how influential Generation Y’s eating habits are on the restaurant industry, as the Generation comes of age.

Managing Technology: A look into hoteliers’ use of current technological trends.

Abstract: The speed at which technology is evolving has led to industry changes across the world. Changes in the hotel industry have influenced the lodging experience for leisure and business travelers. Hoteliers are faced with the expectation of providing an ‘at home’ or ‘in the office’ experience while optimizing their design to provide the technological comforts that have become standard in a lodging experience. The purpose of this study is to analyze the difference between manager’s technological offerings and current lodging technological trends. The managers will be selected and interviewed to gauge the importance of technology trends, their implication, and their future— while keeping the consumer in mind to provide a high quality lodging product. With the tabulation and analysis of this data one will be able to judge the demand for cutting edge technology and make observations about future trends in the lodging industry.

Keeping our Elderly Healthy

Abstract: As the aging population is growing more concerned with longevity and desire to live more healthy lifestyles, there has been an increased awareness and demand for healthy menu items that meet specific nutritional requirements that combat common ailments in the aging. This descriptive study seeks to discover how and to what extent a senior menu would be appealing to the senior citizens that eat out more than once a week in Canandaigua NY. This study will use a market study paper survey. Data will be analyzed in aggregate to identify the top five healthy menu items that seniors are most likely to order and how those foods ensure nutritional balance. This study may be valuable to meet the needs of the new trend of “healthy living” and also increase revenue for current and future restaurant owners in Canandaigua NY.

Managing White-tailed Deer (Odocoileus virginianus) for Buck to Doe Ratio and Increased Body and Antler Size on a Private 340 acres in Arcade, NY

Abstract: Currently in Arcade, New York there is a 340 acre piece of property that is made up of 3 parcels of land with 3 different owners; all of whom would like to see the large deer population managed for different reasons. One property owner, who also leases the other two properties for hunting purposes, would like to see the deer managed for buck to doe ratio and body and antler size. While the other two property owners would like to see the deer population reduced because of damages caused to their woods and vegetable gardens. The first goal of this management plan is to reduce the deer population for the 340 acre property, with objectives of reducing the buck to doe ratio to 1:1 or 1:2 by harvesting more does and monitoring the deer population with a hunter based record system. The second goal of this plan is to provide hunters with better opportunities to harvest mature deer, with objectives of instituting a 120 inch antler restriction and providing deer with better nutrition by using a system of highly nutritional food plots. All measures of success or failure will be assessed using the hunter based record system that was created.

A Paul Smith's College Student Recreational Needs Assessment, A Look Into the Recreation and Leisure Needs and Wants of the Students at Paul Smith's College

Abstract: Paul Smith’s College offers its students what seems like an endless amount of recreation and leisure opportunities. In the field of recreation, a needs assessment is the standard used to gauge the level at which the needs and wants of the users, in this case the students of Paul Smith’s College, are being met by the recreation and leisure programming and facilities available to them. An electronically distributed survey was emailed to all currently enrolled students asking them for their responses regarding the current and potential recreation and leisure opportunities available to them. The results were analyzed to concentrate the emerging themes. Suggestions were than produced that will help align available opportunities with the wants and needs of the students. Most of the suggestions deal with changes to programming, such as expanded offerings and extending the hours that programming such as the climbing wall and swimming pool are open. Yet, there were also recommendations made regarding the facilities, such as adding equipment to the climbing wall to enhance safety. The recommendations, which were directly arrived at using the student's responses, aim at bettering the available recreation and leisure opportunities. That in turn would better serve the students, while clarifying needs and wants to the staff associated with campus recreation at Paul Smith's College.

Extreme Local: Weighing the Financials of Growing Produce On-Premise

Abstract: Restaurant owners across the United States create revenue by limiting their food costs. As the demand for locally grown, organic produce rises, these individuals find it increasingly difficult to offer these comparatively expensive ingredients without raising prices or facing an increase in food cost percentage. This study aims to discover the financial benefits and risks of growing organic produce on-premise, an alternative to buying these ingredients. Comparing the cost of gardening to the perceived value of its product, a financial analysis will assess the return on perfectly ripened, fresh ingredients. The findings will be used to determine the viability of small scale on-premise gardening in any small to medium sized restaurant.

How Local Can You Go?

Abstract: With the ever-increasing interest in and utilization of locally sourced products in food-service establishments, it makes sense for the “green”-striving Paul Smith’s College to bring these efforts to the dining room. The St. Regis Café claims, “We buy local when ever possible and support our regional agriculture as a standard professional practice.” This project will determine to what extent this claim is followed through on, while taking into consideration the required standards of the learning environment in the St. Regis Café. By establishing contact through e-mail with selected farmers and producers, this research will explore what percentage of the menu items could be sourced within a certain region. The resulting information will provide the St. Regis Café with the basis of information regarding product availability, should they be interested in pursuing this option.

Self-Actualization through the use of Food

Abstract: Maslow’s Hierarchy of Needs is a table consisting of human needs according to necessity; in order to reach a new level, needs of the previous level must be met first. Among the physiological needs located at the bottom of the pyramid, is food. Food can be controlled unlike other biological needs and therefore may play a crucial role in reaching the ultimate goal of self-actualization. The surveys will be conducted to gather statistics and opinions of outdoor recreationists and other professionals who pertain to this study. The question that is going to be answered through this capstone is: Is food preparation and consumption an enriching and exciting enough experience to achieve self-actualization?

Cheers To Upscaling Beer With A Cicerone

Abstract: The Cicerone Certification Program has been around only since 2007 but has already given out thousands of Certified Beer Server certificates. The Cicerone Certification Program seeks to ensure that consumers receive the best possible beer and enjoy its flavors to the greatest extent possible. Those who are qualified must know five areas of beer. These areas of knowledge are beer storage, sales and service, beer styles and culture, beer tasting and flavors, brewing ingredients and processes, and pairing beer with food. The program offers three levels of certification beginning with the simplest and building to the most complex and demanding. The three levels of a Cicerone are Certified Beer Server, Certified Cicerone, and Master Cicerone. This study seeks to determine if a Cicerone is needed in an upscale restaurant. The opinion of beverage managers’ will be gathered through the use of interviews. The consensus will be used to determine if it is even worth having a Cicerone in upscale restaurants.
